In fruit and vegetable processing, significant heat is needed for drying, often sourced from coal, electricity, natural gas, or solar energy. Unfortunately, much of this heat goes to waste due to lengthy drying times and inefficient transfer processes. An article in the Journal of Food Science explores catalytic infrared drying technology, which could reduce the amount of heat wasted during the fruit and vegetable drying process.
