DID YOU KNOW? Taquitos, also known as rolled tacos, are a Mexican dish consisting of small, rolled-up tortillas filled with meat, cheese, and/or beans. The origins of taquitos are somewhat unclear, but it is believed they were created in Mexico and have become popular in the United States, particularly in the southwestern states, due to the migration of Mexican workers and families. The concept of rolling a tortilla around a filling likely dates back to the Aztecs. However, the modern taquito/rolled taco as we know it likely originated in the early 20th century. Some sources attribute its creation to Mexican street vendors who needed a way to keep tacos warm and portable for their customers. By rolling the tacos and frying them, the street vendors were able to achieve this goal, creating a dish that was easy to eat on the go. Over time, taquitos/rolled tacos have evolved with many regional variations and fillings, including beef, chicken, pork, and vegetarian options. Here are five interesting facts about potstickers: Origin Story: The name "potstickers" is a literal translation of the Chinese word "guōtiē". Legend has it that potstickers were created by accident when a Chinese chef intended to boil jiaozi (dumplings) but left them cooking for too long. The water evaporated, and the dumplings stuck to the pan and became crispy. Instead of discarding them, the chef decided to serve them, and they were an instant hit. Filling Variety: While potstickers are commonly filled with a mixture of minced pork, cabbage, and various seasonings, there are many variations. They can be filled with chicken, shrimp, vegetables, or other ingredients. Each region in China may have its unique fillings and seasonings. Cooking Method: What sets potstickers apart from other dumplings is their unique cooking method. They are first pan-fried on one side to create a crispy bottom, and then water is added to the pan, which is then covered to steam the dumplings. This method ensures that the potstickers are crispy on the bottom and tender on the top. Cultural Significance: In Chinese culture, dumplings, including potstickers, are traditionally made and consumed during the Chinese New Year as they symbolize wealth and prosperity. What do consumers crave? Consumers continue to crave global flavors While the food industry continues to experience big changes, one thing remains the same – consumers’ love for global foods. In the U.S., they’re increasingly ordering globally inspired foods and beverages from restaurants* and 72% of consumers are very or somewhat interested in global flavors.** According to the “What’s Hot Culinary Forecast” from the National Restaurant Association (NRA), a recent survey of chefs indicates that “global fare and flavors” are among the hottest culinary trends for the future. They expect more globally inspired options in a growing movement to create more refined menus. The report says the top global trends include flavors from Southeast Asia, South America, and the Caribbean. Among these is cardamom, a distinct, multinational spice. It features warm, earthy, citrusy notes that make it great for everything from beverages to dips to entrées to desserts and is often used in Eastern Mediterranean, Indian, and North African cuisines. Spicy condiments are also on fire – the top three, according to the Culinary Forecast, are Korean gochujang, Mexican Tajín, and North African/Middle Eastern harissa.
